Greek Gyros with Tzatziki Sauce

- CHICKEN SOUVLAKI
- 1 Kilogram (kg) boneless skinless chicken thigh fillets
- 3 Piece garlic cloves, minced
- 3 Tea spoon (tsp) white wine vinegar
- 1 Table spoon (tbsp) lemon juice
- 1 Table spoon (tbsp) olive oil
- 3 Table spoon (tbsp) yogurt
- 2 Table spoon (tbsp) oregano
- 3 Tea spoon (tsp) salt
- 1 Tea spoon (tsp) black pepper
- 1 Table spoon (tbsp) thyme
- 1 Table spoon (tbsp) coriander
- 1 Piece red onion, finely chopped
- TZAZIKI SAUCE
- 2 Piece cucumber
- 2 Cup yogurt
- 2 Tea spoon (tsp) white wine vinegar
- 1 Table spoon (tbsp) lemon juice
- 1 Table spoon (tbsp) extra virgin olive oil
- 1 Tea spoon (tsp) salt
- 1 Table spoon (tbsp) minced fresh dill
- SALAD AND FRENCH FRIES
- 3 Piece tomatoes, desseeded and sliced
- 3 Piece cucumber, sliced
- 1 Piece red spanish onion, peeled and finely chopped
- 2 Cup red cabbage, sliced
- 1 Kilogram (kg) potato
Instructions
CHICKEN SOUVLAKI
This is a homemade greek gyros recipe served with tzatziki and french fries on a plate. Easy to make at home, no needs more ingredients than a grill food.
In a mixing bowl, whisk together olive oil, lemon juice, Greek yogurt, vinegar, chopped red onion, garlic, oregano, thyme, coriander and season with salt and freshly ground black pepper to taste. Place chicken in a gallon ziploc bag, pour marinade over chicken, seal bag while pressing out excess air and transfer to refrigerator to marinate 2 – 4 hours. Remove chicken during the last 30 minutes of marinating to rest at room temperature before grilling (leave in marinade).
Brush grill grates lightly with oil and preheat grill over moderately high heat. Once hot, add chicken and grill until cooked through, rotating once halfway through cooking. If you don’t use outdoor grill just fry the chicken thights in frying pan over high-medium heat with a tablespoon oil or in the oven on 180 C degree for 30-40 minutes. Cooking time depends on size of chicken. Remove from grill transfer to plate and brush chicken lightly with olive oil then cover with foil and allow to rest 10 minutes before dice into strips.
TZATZIKI SAUCE
Cut the cucumber in half lengthwise. Use a teaspoon to scrape the watery seeds out. Coarsely grate the cucumber using a box grater. Salt it with a peck of salt and set aside for 5 minutes. Then squizee the juice with hand. Place cucumber in a bowl. Add remaining ingredients then mix to combine. Set aside for at least 20 minutes for the flavours to meld in refrigerator.
SALAD AND FRENCH FRIES
Slice all raw vegetables and fry the french fries, lightly salt it. Than place some french fries and vegetables down the middle of the plate, then top with chicken and Tzatziki.
