Homemade Pistachio Baklava with Phyllo Dough

homemade pistachio baklava

If you love crispy, buttery pastries filled with nuts and soaked in sweet syrup, this homemade pistachio baklava is a dessert you simply have to try. Made with layers of delicate phyllo dough, finely chopped pistachios, and a homemade lemon syrup, it has the perfect combination of crunchy texture and rich, nutty flavor.

Baklava is a traditional dessert enjoyed in Turkey, Greece, the Middle East, and many other countries. While there are countless regional variations, the basic idea remains the same: thin layers of pastry, nuts, butter, and sweet syrup.

This easy pistachio baklava recipe uses store-bought phyllo pastry (also called filo pastry), making it much simpler to prepare at home. Cut into small, bite-sized squares, it’s perfect for holidays, family gatherings, or enjoying with a cup of coffee.

Why You’ll Love This Pistachio Baklava

  • Made with convenient store-bought phyllo dough.

  • Deliciously crispy, golden layers with a rich pistachio filling.

  • Simple homemade syrup with a hint of lemon.

  • Cut into small squares, perfect for serving at parties.

  • Can be prepared ahead of time and tastes even better the next day.

Tips for Perfect Pistachio Baklava

Keep the phyllo dough covered. Phyllo pastry dries out very quickly. Always cover unused sheets with a slightly damp towel while working.

Use unsalted pistachios. They provide the best flavor and allow you to control the sweetness of the dessert.

Don’t grind the nuts too finely. The pistachios should have a slightly coarse texture rather than becoming a smooth paste.

Brush each pastry layer with butter. This helps create the delicate, flaky layers that make baklava so delicious.

Cut before baking. Cutting the pastry into squares while it’s still soft prevents the crispy layers from breaking apart later.

Use cooled syrup on hot baklava. This traditional technique helps the pastry absorb the syrup while maintaining a pleasant texture.

Allow enough resting time. Baklava tastes even better after several hours, once the syrup has been absorbed and the flavors have developed.

Ingredients

  • BAKLAVA:
  • 2 packages phyllo dough (approximately 400–500 g total)
  • 300–350 g (10.5–12 oz) unsalted, shelled pistachios
  • 250–300 g (9–10.5 oz) unsalted butter, melted
  • SUGAR SYRUP
  • 400 g (2 cups) granulated sugar
  • 300 ml (1¼ cups) water
  • 2 teaspoons freshly squeezed lemon juice
  • DECORATION
  • 2–3 tablespoons finely chopped pistachios

Instructions

Step 1: Prepare the Sugar Syrup

Start by making the syrup so it has enough time to cool before the baklava comes out of the oven.

Combine the sugar and water in a medium saucepan. Bring to a boil over medium heat, stirring until the sugar has completely dissolved.

Add the lemon juice and reduce the heat. Simmer gently for approximately 8–10 minutes, until the syrup thickens slightly.

Remove from the heat and allow it to cool completely.

Step 2: Prepare the Pistachios

Place the shelled pistachios in a food processor and pulse until finely chopped. Be careful not to process them too long, as they can turn into a paste.

Set aside a few tablespoons of chopped pistachios for decorating the finished baklava.

Melt the butter over low heat and keep it warm while assembling the pastry.

For an especially crispy result, you can use clarified butter, which contains less moisture than regular melted butter.

Step 3: Layer the Phyllo Dough

Preheat your oven to 170°C (340°F), conventional heat.

Lightly butter a medium-sized baking dish, approximately 25 × 35 cm (10 × 14 inches).

Unroll the phyllo dough and cover the unused sheets with a slightly damp kitchen towel to prevent them from drying out.

Place the first sheet of phyllo dough in the baking dish and brush it lightly with melted butter.

Continue layering approximately half of the phyllo sheets, brushing each sheet with butter before adding the next.

Spread the finely chopped pistachios evenly over the pastry, creating a generous nut filling.

Cover with the remaining phyllo sheets, brushing each layer with melted butter.

Finish by brushing the top layer generously with butter.

Step 4: Cut the Baklava into Small Squares

Before baking, use a sharp knife to cut the assembled baklava into approximately 2 × 2 cm (¾-inch) squares.

Carefully cut all the way through the pastry layers to the bottom of the baking dish.

Cutting the baklava before baking is important because the delicate phyllo layers become very crispy and fragile in the oven.

The small squares are perfect for serving as bite-sized treats.

Step 5: Bake Until Golden and Crispy

Place the baking dish in the preheated oven and bake for approximately 35–45 minutes, or until the top is a beautiful golden-brown color.

The pastry should be crispy throughout, including the bottom layers.

If the top begins to brown too quickly, reduce the temperature slightly and continue baking until the pastry is fully cooked.

Step 6: Pour the Syrup Over the Baklava

Remove the baklava from the oven and allow it to rest for 2–3 minutes.

Slowly pour the cooled sugar syrup over the hot pastry, distributing it evenly and allowing it to flow into the cuts between the squares.

Pour gradually so the syrup has time to absorb.

Let the baklava rest at room temperature for at least 4–6 hours, preferably overnight.

This resting period allows the syrup to penetrate the layers and gives the dessert its characteristic sweet, rich flavor.

Step 7: Decorate and Serve

Once the baklava has absorbed the syrup, sprinkle the reserved chopped pistachios over the top.

Carefully separate the small squares and arrange them on a serving plate.

Serve at room temperature with a cup of strong coffee or tea.
