Blue Cheese Walnut Crackers

- 200 Gram (g) flour
- 100 Gram (g) butter
- 50 Gram (g) blue cheese
- 50 Gram (g) walnut
- 1 Tea spoon (tsp) salt
- 1 Tea spoon (tsp) baking powder
Instructions
Blue cheese is one of those things that tastes better than it smells. These shortbread crackers, or cookies based on the classic pair of blue cheese and walnut. Delicious as an appetizer, along with some fresh grapes or just serve with a glass of wine in winter evening.
Combine flour, salt and baking powder in a mixing bowl. Cut in cheese and butter with a pastry blender or fork until the mixture resembles coarse crumbs. Add walnuts and stir until smooth. Form mixture into a ball, knead with hands until it clings together. (5-10 minutes). Wrap up with plastic bag and shape a log approximately 20 cm long. Chill for 2 hours in refrigerator. Preheat the oven to 200 C degree. Cut each log into 0.5 cm thick slices and place slightly apart on an baking paper covered cookie sheet. Bake 8-10 minutes or until the bottoms and edges are golden brown. Don’t bake over because the walnut can be bittered. Cool on wire racks and at room temperature. Store tightly, covered up to one week.
