Hungarian Sauerkraut with Smoked Pork and Rice (Húsos Káposzta)

húsos káposzta

Húsos káposzta is a traditional Hungarian comfort food made with sauerkraut, rich smoked pork, rice, and a simple flour roux. The secret to its delicious flavour is using fatty smoked meat, such as pork ribs or bacon, which gives the sauerkraut a wonderfully rich, smoky taste.

This is an old-fashioned, rustic Hungarian dish that requires only a handful of ingredients. No complicated seasonings or extra vegetables are needed — the smoked pork and fermented cabbage provide all the flavour.

Traditional Hungarian Cooking Tips

Choose fatty smoked pork: Smoked ribs, pork belly, and fatty bacon give this dish its characteristic richness. Lean meat will not produce quite the same flavour.

Use naturally fermented sauerkraut: Traditional lactic-acid-fermented cabbage provides a deeper, more complex flavour than vinegar-pickled cabbage.

Be careful with salt: Smoked pork and sauerkraut are already salty, so additional salt is usually unnecessary.

Even better the next day: Like many traditional Hungarian cabbage dishes, húsos káposzta tastes even better after resting overnight, when the smoky flavours have had time to develop.

Keep the roux simple: A traditional flour-and-fat roux is all that is needed to give the cooking liquid a slightly thicker consistency.

Why no additional spices are needed: Traditional Hungarian sauerkraut is fermented with bay leaves, black peppercorns, caraway seeds, quince, and whole dried red peppers. Since the sauerkraut already contains some of these aromatic spices, particularly caraway and black pepper, there is no need to add any extra seasoning to the dish. The fermented cabbage and smoked pork provide all the flavour needed.

Ingredients

  • 1.5 kg sauerkraut (fermented cabbage)
  • 600 g fatty smoked pork ribs or other fatty smoked pork
  • 200 g smoked bacon or pork belly
  • 250 g uncooked white rice
  • 2 tablespoons pork lard or oil
  • 2 tablespoons all-purpose flour
  • Water and salt, as needed

Instructions

1. Prepare the smoked pork

Cut the smoked pork ribs into serving-sized pieces and dice the smoked bacon into larger chunks.

If the smoked meat is particularly salty, soak it in cold water for a few hours before cooking.

2. Cook the sauerkraut and meat

Place the sauerkraut in a large, heavy-bottomed pot. If it is excessively sour, rinse it briefly in cold water, although traditionally it is best to preserve its natural tangy flavour.

Add the smoked pork ribs and bacon, then pour in enough water to just cover the ingredients.

Bring to a boil, reduce the heat, and simmer gently for approximately 1.5–2 hours, or until the pork is tender.

3. Add the rice

Rinse the rice and stir it into the sauerkraut and pork.

Make sure there is enough cooking liquid for the rice to absorb. Add a little hot water if necessary.

Continue cooking over low heat for another 20–25 minutes, until the rice is tender. Stir occasionally to prevent sticking.

4. Prepare the roux

In a small saucepan, heat the pork lard. Add the flour and stir continuously over medium-low heat until it turns a light golden colour.

Gradually add a little cold water, stirring until smooth and free of lumps.

Pour the roux into the sauerkraut mixture and stir gently to distribute it evenly.

Simmer for another 5–10 minutes, allowing the sauce to thicken slightly.

5. Serve

Serve the húsos káposzta hot, with generous portions of tender smoked pork, sauerkraut, and rice.

This hearty Hungarian dish is especially delicious during the colder months.
