Black Radish Salad

- 1 Piece black radish (big)
- 1 Table spoon (tbsp) freshly squeezed lemon juice
- 1 Piece shallot, sliced paper-thin
- 1 Table spoon (tbsp) olive oil
- 1 Tea spoon (tsp) Dijon mustard
- 1 Peck salt
Instructions
Black radish is a great vinter veggie, let’s make this salad in a simple way. In a medium sized bowl whisk together the lemon juice and the mustard, then slowly whisk in the olive oil into the mixture until it emulsifies. Slice the radish thinly. Add the radish and the shallot to the vinaigrette and toss so that all the ingredients are thoroughly combined. Season with salt. Serve immediately with fried bacon and a slice of bread. Good basis for sandwiches as well.
