Pork stew, known in Hungary as sertéspörkölt, is a traditional Hungarian main dish made from tender pork slowly simmered with onions and sweet paprika. This classic pork stew recipe delivers a rich, thick sauce and deep, savory flavor, reflecting the fundamentals of Hungarian home cooking. Hearty and comforting, sertéspörkölt is typically served with noodles, dumplings, boiled potatoes or just simple fresh bread.

Serves: 2 portion

Ingredients

  • 50 Dekagram (dkg) pork leg, cut into cubes
  • 1 Piece onion big
  • 3 Peck black pepper grounded
  • 2 Tea spoon (tsp) salt
  • 3 Tea spoon (tsp) sweet paprika powder
  • 2 Peck caraway seed (whole or grounded)
  • 1 Piece fresh pepper (preferable chili)
  • 1 Piece fresh tomato
  • 2 Table spoon (tbsp) oil (or pork fat)
  • 2 Piece garlic cloves

Instructions

The pork stew, goulash or „porkolt” is a Hungarian traditional food which is mainly served on Saturday, on every holiday and family parties. These foods are included in the main family events sucha as Weddings, christenings, birthdays. These dishes o!en are cooked outdoors on fire with friends arranging a garden party. The preparation is easy if you have access to the sweet paprika powder which gives a special flavor to the stew. Chop the onions, slice the garlic and sautee on oil with a teaspoon salt until pale yellow. Cut the meats into cubes (about 3×3 cm). Put the meats into the pan and roast them in all sides until white, during stir them. Remove from heat and add the sweet paprika and spices. Stir it and add enough hot water to cover the meat. Cook the stew for 45 minutes under the cover in its own gravy. (Add some water if it is neccessary). Slice the tomato and put out a quarter of green pepper (with the cores) and the chili if you like. Add them to the stew and cook again for 30 minutes under the cover. The stew is eaten usually with salty cooked potatoes, Hungarian dumplings, pasta or just the best is the fresh bread. Serve with pickles or cucumber salad. I love to eat cold on next day with pickles and bread.
