Hungarian Pork Soup (Húsleves)

hungarian pork soup

Hungarian pork soup (húsleves) is a traditional, slow-simmered meat soup with tender vegetables, aromatic spices, and delicate noodles. It is one of the most beloved dishes in Hungarian home cooking, traditionally served as the first course of Sunday lunch or at family gatherings.

Although Hungarian húsleves is often prepared with chicken or beef, pork shoulder makes an equally delicious version. The slow cooking process produces a rich, flavorful broth, while the pork becomes wonderfully tender.

The secret to a perfect Hungarian meat soup is simple: fresh ingredients, gentle simmering, and plenty of patience.

Tips for the Perfect Hungarian Húsleves

Always start with cold water. Slowly heating the meat allows its flavors to develop gradually, creating a richer broth.

Keep the heat low. Traditional Hungarian húsleves should simmer gently rather than boil vigorously. This is the key to a beautifully clear soup.

Don’t overcook the vegetables. If the vegetables become tender before the pork, remove them from the pot and set them aside until serving.

Cook the noodles separately. This keeps the broth clear and allows you to store any leftovers without the noodles becoming soggy.

For those who like it spicy: You can add a whole hot Hungarian pepper to the soup, leaving the stem and seeds intact. Do not cut or pierce the pepper, as this would release its heat into the entire broth. Cook it whole, then remove it before serving. Anyone who enjoys spicy food can add a piece of the cooked pepper to their own bowl, while the rest of the soup remains mild.

Ingredients

  • 800 g–1 kg (1.8–2.2 lbs) pork shoulderut into small cubess
  • 4–5 medium carrots
  • 2–3 parsley roots
  • 1 small celeriac (celery root), or half a large one
  • 1 large onion
  • 3–4 garlic cloves
  • 1 green pepper (preferably Hungarian sweet pepper)
  • 1 small bunch of fresh parsley
  • 10–15 whole black peppercorns
  • Salt, to taste
  • 3.5–4 liters (about 15–17 cups) cold water
  • 150–200 g (5–7 oz) fine vermicelli or Hungarian egg noodles

Instructions

1. Prepare the meat

Place the pork shoulder in a large soup pot. You can leave the meat whole or cut it into a few large pieces.

Pour in the cold water and slowly bring it to a gentle simmer over medium heat.

As the water heats up, foam will begin to rise to the surface. Carefully remove it with a spoon or fine-mesh skimmer. Repeat until the broth is relatively clear.

2. Add the vegetables and seasonings

Peel the carrots, parsley roots, and celeriac. Cut larger vegetables into halves or thick pieces.

Wash the onion and leave a layer of its clean, golden-brown outer skin intact. This traditional Hungarian trick gives the broth a beautiful golden color.

Add the prepared vegetables, onion, garlic cloves, green pepper, fresh parsley, and whole black peppercorns to the pot.

Season with salt to taste.

3. Simmer slowly

Reduce the heat to low and let the soup simmer very gently, partially covered, for approximately 2.5–3 hours.

The broth should barely bubble. Avoid a rolling boil, as vigorous boiling can make the soup cloudy.

Cook until the pork is fork-tender and the vegetables are soft but still hold their shape.

If necessary, add a little hot water during cooking to replace any liquid lost through evaporation.

4. Strain the broth

When the meat is tender, remove the pot from the heat and let the soup rest for a few minutes.

Carefully lift out the meat and vegetables, then strain the broth through a fine-mesh sieve into a clean pot.

Slice the cooked carrots and parsley roots into smaller pieces. Cut or shred the pork into serving-sized portions.

5. Cook the noodles

In a separate saucepan, cook the vermicelli or Hungarian egg noodles according to the package instructions.

Drain well.

Cooking the noodles separately prevents the broth from becoming cloudy and keeps leftover noodles from absorbing too much soup.

6. Serve

Place a portion of cooked noodles in each soup bowl. Add a few pieces of tender pork and sliced vegetables.

Ladle the hot, golden broth over everything. Serve immediately.
