Homemade Pistachio Baklava with Phyllo Dough
Print RecipeIngredients
- BAKLAVA:
- 2 packages phyllo dough (approximately 400–500 g total)
- 300–350 g (10.5–12 oz) unsalted, shelled pistachios
- 250–300 g (9–10.5 oz) unsalted butter, melted
- SUGAR SYRUP
- 400 g (2 cups) granulated sugar
- 300 ml (1¼ cups) water
- 2 teaspoons freshly squeezed lemon juice
- DECORATION
- 2–3 tablespoons finely chopped pistachios
Instructions
Step 1: Prepare the Sugar Syrup
Start by making the syrup so it has enough time to cool before the baklava comes out of the oven.
Combine the sugar and water in a medium saucepan. Bring to a boil over medium heat, stirring until the sugar has completely dissolved.
Add the lemon juice and reduce the heat. Simmer gently for approximately 8–10 minutes, until the syrup thickens slightly.
Remove from the heat and allow it to cool completely.
Step 2: Prepare the Pistachios
Place the shelled pistachios in a food processor and pulse until finely chopped. Be careful not to process them too long, as they can turn into a paste.
Set aside a few tablespoons of chopped pistachios for decorating the finished baklava.
Melt the butter over low heat and keep it warm while assembling the pastry.
For an especially crispy result, you can use clarified butter, which contains less moisture than regular melted butter.
Step 3: Layer the Phyllo Dough
Preheat your oven to 170°C (340°F), conventional heat.
Lightly butter a medium-sized baking dish, approximately 25 × 35 cm (10 × 14 inches).
Unroll the phyllo dough and cover the unused sheets with a slightly damp kitchen towel to prevent them from drying out.
Place the first sheet of phyllo dough in the baking dish and brush it lightly with melted butter.
Continue layering approximately half of the phyllo sheets, brushing each sheet with butter before adding the next.
Spread the finely chopped pistachios evenly over the pastry, creating a generous nut filling.
Cover with the remaining phyllo sheets, brushing each layer with melted butter.
Finish by brushing the top layer generously with butter.
Step 4: Cut the Baklava into Small Squares
Before baking, use a sharp knife to cut the assembled baklava into approximately 2 × 2 cm (¾-inch) squares.
Carefully cut all the way through the pastry layers to the bottom of the baking dish.
Cutting the baklava before baking is important because the delicate phyllo layers become very crispy and fragile in the oven.
The small squares are perfect for serving as bite-sized treats.
Step 5: Bake Until Golden and Crispy
Place the baking dish in the preheated oven and bake for approximately 35–45 minutes, or until the top is a beautiful golden-brown color.
The pastry should be crispy throughout, including the bottom layers.
If the top begins to brown too quickly, reduce the temperature slightly and continue baking until the pastry is fully cooked.
Step 6: Pour the Syrup Over the Baklava
Remove the baklava from the oven and allow it to rest for 2–3 minutes.
Slowly pour the cooled sugar syrup over the hot pastry, distributing it evenly and allowing it to flow into the cuts between the squares.
Pour gradually so the syrup has time to absorb.
Let the baklava rest at room temperature for at least 4–6 hours, preferably overnight.
This resting period allows the syrup to penetrate the layers and gives the dessert its characteristic sweet, rich flavor.
Step 7: Decorate and Serve
Once the baklava has absorbed the syrup, sprinkle the reserved chopped pistachios over the top.
Carefully separate the small squares and arrange them on a serving plate.
Serve at room temperature with a cup of strong coffee or tea.
