Hungarian Sauerkraut with Smoked Pork and Rice (Húsos Káposzta)
Print RecipeIngredients
- 1.5 kg sauerkraut (fermented cabbage)
- 600 g fatty smoked pork ribs or other fatty smoked pork
- 200 g smoked bacon or pork belly
- 250 g uncooked white rice
- 2 tablespoons pork lard or oil
- 2 tablespoons all-purpose flour
- Water and salt, as needed
Instructions
1. Prepare the smoked pork
Cut the smoked pork ribs into serving-sized pieces and dice the smoked bacon into larger chunks.
If the smoked meat is particularly salty, soak it in cold water for a few hours before cooking.
2. Cook the sauerkraut and meat
Place the sauerkraut in a large, heavy-bottomed pot. If it is excessively sour, rinse it briefly in cold water, although traditionally it is best to preserve its natural tangy flavour.
Add the smoked pork ribs and bacon, then pour in enough water to just cover the ingredients.
Bring to a boil, reduce the heat, and simmer gently for approximately 1.5–2 hours, or until the pork is tender.
3. Add the rice
Rinse the rice and stir it into the sauerkraut and pork.
Make sure there is enough cooking liquid for the rice to absorb. Add a little hot water if necessary.
Continue cooking over low heat for another 20–25 minutes, until the rice is tender. Stir occasionally to prevent sticking.
4. Prepare the roux
In a small saucepan, heat the pork lard. Add the flour and stir continuously over medium-low heat until it turns a light golden colour.
Gradually add a little cold water, stirring until smooth and free of lumps.
Pour the roux into the sauerkraut mixture and stir gently to distribute it evenly.
Simmer for another 5–10 minutes, allowing the sauce to thicken slightly.
5. Serve
Serve the húsos káposzta hot, with generous portions of tender smoked pork, sauerkraut, and rice.
This hearty Hungarian dish is especially delicious during the colder months.
